But what exactly is pure vanilla extract?
Stephen Chavezis a senior chef-instructor of Pastry & Baking Arts at the Institute of Culinary Education.
What Is Pure Vanilla Extract?
Vanilla extract is a flavoring agent used to enhance a variety of desserts and even savory dishes.
It interacts with other ingredients in a recipe to make each bite much more flavorful.
Pure vanilla extract is made fromvanilla beans, which contain natural vanillin.
Imitation vanilla extract, on the other hand, is made from synthetic vanillin.
Why Does Pure Vanilla Extract Cost So Much?
If it’s just vanilla beans soaked in water and alcohol, why is it so pricey?
Of course, once the price of vanilla goes up, so does the price of vanilla extract.
Shipping, theft, and waste are also contributors to price increases.
Is Pure Vanilla Extract Worth It?
But is the extra cost of using pure vanilla worth it?
“The flavor from pure vanilla extract is tremendously better than cheap vanilla extract,” says Chavez.
And most professional bakers would agree.
Imitation vanilla extract is still a fine option if you’d prefer to keep costs low.
It can be a more affordable option.
Does Vanilla Extract Need To Be Refrigerated?
Refrigeration isn’t necessary for vanilla extract.
Store it in a cool, dark place where the temperature doesn’t fluctuate.
Storing it in a dark glass bottle away from sunlight will keep it from getting cloudy.
Pure vanilla extract can last indefinitely.
Imitation versions are best within a year after theirexpiration date.
Neither bang out will spoil, but they may have a weaker flavor after awhile.
Give the extract a sniff.
If it still has a strong, pleasant aroma, go for it.
