In my family, momma only cooked white meat chicken because she couldn’t abide dark meat.
But I’ve shied away from gizzards because honestly, I didn’t know what they were.

They can be used to add flavor to dishes (likegiblet gravy) or eaten on their own.
Packed with protein and low in fat, they also have a ton of vitamins and minerals.
Gizzards are commonly eaten throughout the world and are considered a delicacy in some areas.
They can be boiled, braised, pickled, slow-cooked, barbecued, fried, and more.
Find them prepackaged at the grocery store, the farmer’s market, or a local butcher.
check that to ask if they’ve been cleaned.
If not, it’s easy to do yourself.
When buying, verify the gizzards are cold and keep them cold until you get home.
Look for pasture-raised chicken for good flavor and nutrition.
(You dont want to accidentally add a little sand or grit to your meal.)
Dont be surprised to find a bunch of dirt, sand, gravel, and other surprises in there!
Store raw gizzards in the refrigerator in a tightly sealed container until you are ready to cook them.
Use the gizzards within two days or freeze them for up to four months.
Cooking them with direct high heat from the start can cause the connective tissue to toughen even more.
Since gizzards are a muscle, they can be pretty tough.
