This refreshing watermelon feta salad only takes 10 minutes to put together.
Themintadds brightness, making sure the watermelon’s sweetness isn’t lost entirely.
We also like the addition of raw onion for a little bite and texture.

The longer it sits, the more liquid will be released from the watermelon.
Prepare the dressing and store in a lidded jar in the refrigerator.
Assemble the salad fresh before serving.

Pair withcorn on the cob, grilled vegetables, quinoa, farro, and pita or crusty bread.

1cupthinly slicedred onion(from 1 large red onion)

]block Greek feta cheese
1/4cupfresh mint, roughly chopped (from 1 [1-oz.]

Crumble feta cheese over cheese over top.
