Butternut squash would also be great here, or even finely chopped broccoli.

fresh button mushrooms, stemmed and chopped (about 2 1/2 cups)

1medium(8 oz.

)zucchini, chopped (about 2 cups)

1medium-size(8 oz.

)yellow onion, chopped (about 2 cups)

1small(6 oz.

fresh baby spinach(about 5 cups)

3cupswhole-milk ricotta cheese(from 2 [15-oz.]

Coat a 13-x9-inch baking dish with cooking spray; set aside.

Cook vegetables and seasoning:

Heat oil in a large skillet over medium-high.

Top with 4 of the noodles, breaking noodles as needed to fill in any empty spaces.

Remove from oven and let stand for 10 minutes before serving.
