We tried one of the most-searched recipes on the Barefoot Contessa website.

While the ever-breezy Garten has a way of making things look effortless, that wasntexactlythe case for me.

But it was so delicious that Ill be making it again very soon.

Only this time I wont make the same mistake, and, thanks to me, neither will you.

(Dont you reach for your pearls!

The alcohol cooks down!)

Thats a major positive in my book.

The recipe calls forunpeeledcarrots.

The Process

The heaviest lift is in the preparation, but the steps are far from complicated.

Give yourself a full 20 minutes to take care of washing and chopping the vegetablesyoull need it.

But after youre done prepping the veggies, the rest is hands off.

Easy peasy zero greasy!

The Result

When I tell you I was slurping up the sauce, I wasslurp-ingup the sauce.

Its rich and decadent but not too filling and the veggies were the perfect texture.

I highly recommend serving this with a loaf of crusty bread for sopping up all that deliciousness.

I live in asmall town.

Grocery stores here are few and far between and their offerings are pretty limited.

Gartens recipe specifically calls for very meatybone-in beef short ribs, cut into two-inch chunks.

Instead of altering the cooking time to accommodate the size of my ribs, I followed Gartens timing exactly.

(Were there tears?

My transparency has a limit, folks.)
