Why Radishes Belong In Egg Salad

Radishes can be polarizing, I know.
Some people dislike them because they can be too hot and spicy when eaten on their own.

But when minced and stirred intoegg salad, these spring root vegetables add a peppery bite that works perfectly.
In fact, I like using radishes in place of the usual black pepper.
The key is to taste your radishes before adding them to the egg salad.
Their heat levels can vary wildly and you cant tell how hot a radish is by looking at it.
Depending on how spicy the radish is, you might add as little or as much as you like.
A little fresh dill and scallion add zesty notes that are a great match for the eggs.
You dont need much, just a small amount to add flavor without overpowering the eggs.
