How did my grandmother make that dressing again?
So, I dialed my grandmother (Juju as we called her) to ask her for the recipe.

And by “just right,” I mean just like my grandmother’s.
Her answers, Im sure, would be non-definitive.
Of course, I did make some slight adaptations, but I dont think my grandmother would have minded.

Just confirm to, at a minimum, season it with salt and pepper.

I prefer some varied texture in my dressing, so I leave a few larger pieces in the mix.
Ultimately, its whatever texture you prefer.
Ive let cornbread stale in a cold oven for up to a week.
If you forget, you’ve got the option to quicklydry out cornbread in the oven.
When ready to serve, remove the plastic wrap and cover with foil, then rewarm in the oven.
Reheat the entire dish covered in the oven or individual servings in the microwave.
Ingredients
1 panSouthern Skillet Cornbread,crumbled and dried out
1box(8.5 oz.
)cooked and shreddedchicken breasts
Directions
Gather ingredients and prep dish:
Gather all ingredients.
Preheat oven to 375F with rack in center of oven.
Grease a 13- x 9-inch baking dish with butter.
Cook onions and celery:
Melt butter in a large Dutch oven over medium heat.
Add the white portion of the green onions, yellow onion, and celery.
Stop adding broth when the mixture is moist, but not overly wet.
Add chicken:
Add chicken, and stir to incorporate.
Drizzle with additional chicken broth if mixture seems dry after adding the chicken.
Bake:
Transfer mixture to the prepared baking dish, smoothing into an even layer.
Bake until golden and set, about 1 hour.
