Louisiana crunch cake is aSouthern dessert staple.
Add additional cream, a half tablespoon at a time, until the glaze reaches the desired consistency.
Drizzle the glaze over the cooled cake right away, and then top it evenly with the remaining coconut.

And if you really love coconut flavor, add some coconut extract to the batter.
Or try the recipe with coconut milk instead of heavy cream in the glaze.
Heavily grease a 12-cup Bundt pan with cooking spray.

Add coconut to pan:
Sprinkle 1/4 cup of the coconut around bottom of sugar-coated Bundt pan.
Cool Cake in Bundt pan on a wire rack for 15 minutes.
Add remaining cream, 1/2 tablespoon at a time, until glaze reaches desired consistency.

Immediately drizzle Glaze over cooled Cake.
