Mix It Up

The beauty of this recipe is how quickly it comes together.

The only way you’re able to go awry is to stir for too long.

For soft, light biscuits, dont overmix your dough.

I use a fork to combine the ingredients, but a pastry blender works great too.

The important thing is to quit stirring as soon as the ingredients form a loose dough.

(No one wants to eat a hockey puck.)

If you like yours more browned on the edges, place them about 2 inches apart.

Add flour to a medium bowl.

Pour in cream, mixing with a fork or a pastry blender just until combined.

(Do not overmix dough.)

Pat down dough to about 12-inch thickness, and cut using a 2-inch round cutter.

Reroll scraps of dough into a ball, flatten, and cut out more rounds.

Roll any remaining dough into a ball, and pat down to form another round.

(This dough is too good to waste.)

Place dough rounds on a baking stone or ungreased baking sheet.

Bake in preheated oven until golden brown, about 10 to 12 minutes.

Serve biscuits warm with butter, honey, or jam.
