Potatoes are a bit of a scene-stealer at Thanksgiving.
Frommashedto hashed, baked tofried, there’s no way we won’t eat the starchy side.
But even we were impressed by how these Thanksgiving potatoes can one-up any potato dish you’ve ever had.

The cheese sauce comes together beautifully with a cornstarch slurry.
Top it all off with fresh cooked bacon and chives.
Once scoop of Thanksgiving potatoes, and you’ll have the family fighting over this dish!

Grease a 13- x 9- inch baking dish with butter; set aside.
Remove using a slotted spoon, and let drain on a paper towel-lined plate.
Reserve 2 tablespoons bacon drippings in skillet; discard or reserve remaining drippings for another use.

Remove from heat and set aside.
Layer potato slices, overlapping as needed, in prepared baking dish.
Pour cheese sauce evenly over potatoes; sprinkle top evenly with remaining 1 cup Cheddar.

Remove from oven, and let stand 5 minutes.
Sprinkle with reserved bacon and chives.
