Once baked, the stuffed pork loin is tender and moist.
The mustard greens stuffing is quite bacon-forward, while onion and sun-dried tomatoes add sweetness for balance.
The filling can also be made ahead of time to reduce prep on the day youre serving it.

2Tbsp.stone-groundDijon mustard
Directions
Gather ingredients.
Transfer bacon to a plate; reserve drippings in skillet.

Add onion to skillet; cook over medium, stirring occasionally, until softened, 8 to 10 minutes.
Add sun-dried tomatoes, garlic, and 3/4 teaspoon each salt and pepper.
Gradually add mustard greens, stirring until wilted, about 5 minutes.

Remove from heat; stir in panko and cooked bacon.
Let cool 10 minutes.
Preheat oven to 350F.

Place pork loin on a cutting board, fat side down.
Open up loin like a book; repeat slicing process with each side.
Cover loin with plastic wrap; pound to an even 3/4-inch thickness.

Spread greens mixture over pork, leaving a 1-inch border.
Starting at one long side, roll pork into a tight cylinder.
Tie with kitchen twine at 1-inch intervals.

Sprinkle with remaining 1 tablespoon salt and 1 teaspoon pepper.
Place loin seam side down on a rimmed baking sheet; brush evenly with mustard.
Roast in preheated oven until a thermometer inserted into pork registers 145F, 45 to 50 minutes.

Transfer to a cutting board; let rest for 10 minutes before removing twine and slicing.
