Directions

Make sauce:

Preheat oven to 400F.

Heat oil in a large skillet over medium-low.

Add onion; cook, stirring occasionally, until translucent, about 4 minutes.

Add garlic and cumin; cook, stirring occasionally, until fragrant, about 30 seconds.

Remove from heat, and transfer to a blender.

Return mixture to large skillet, and bring to a gentle simmer over medium-low.

Simmer, stirring often, until flavors meld, about 3 minutes.

Add pulled pork; cook, stirring often, until sauce is very thick, 8 to 10 minutes.

Prepare rolls:

While pork cooks, line a rimmed baking sheet with parchment paper.

Brush tops and sides of rolls evenly with butter.

Bake in preheated oven until lightly toasted, about 10 minutes.

Spoon about 2 1/2 tablespoons pulled pork in each roll; top evenly with sweet pickle relish.
