Pancakes:
1 1/2cups(about 6 3/8 oz.
Cover and refrigerate until ready to use.
Let batter rest for 5 minutes.

Cook Pancakes:
Set a wire rack inside a rimmed baking sheet; set aside.
Heat a large nonstick skillet over medium.
Working in batches, scoop 1/4 cupfuls of batter into skillet 1/2- to 1-inch apart.

Carefully flip Pancakes and cook until bottoms are lightly golden and Pancakes are cooked through, about 2 minutes.
Transfer to prepared wire rack.
Repeat process with remaining Pancake batter.
