1cupchoppedyellow onion

Grease a 6-quart slow cooker with cooking spray.
Heat butter in a medium skillet over medium-high.
Add onion and cook 5-6 minutes, until softened.

Stir in potatoes, cooked onion, and 1 1/2 cups cheese.
Cover and cook on LOW 6 hours or until potatoes are tender.
During last 15 minutes of cook time, stir potatoes and sprinkle with remaining shredded cheese.
