Can You Make Sausage Rolls Ahead of Time?

Label the bag and date it.

Ingredients
1Tbsp.

canola oil
3large (2 oz.
each) shallots, finely chopped (1 cup)
1medium (2 1/4 oz.)
carrot, finely chopped (1/2 cup)
1lb.
spicy ground pork sausage
1/2cup panko (Japanese-style breadcrumbs)
3Tbsp.
chopped fresh herbs (such as parsley, thyme, sage, or rosemary)
1Tbsp.
crushed red pepper
2large eggs
1Tbsp.
water
1(17.3-oz.)
Add shallots, and cook, stirring occasionally, until softened, 3 to 5 minutes.
Transfer to a large bowl, and let cool 10 minutes.
Prepare pastry:
Whisk together water and remaining 1 egg in a small bowl.
Brush exposed pastry with egg mixture.
Carefully wrap pastry around sausage mixture, overlapping ends slightly, and seal.
Roll slightly to create a uniform 12-inch log.
Place seam side down on a baking sheet lined with parchment paper.
Freeze until firm, 1 to 2 hours.
Cut rolls into smaller pieces:
Preheat oven 425F.
Line a second baking sheet with parchment paper.
Keep 1 baking sheet in freezer until ready to bake.
Brush top of sausage logs with egg mixture, and cut 2 slits on top of each sausage log.
Let cool 5 minutes; serve.
