Yes, you could freeze sausage gravy.
Freeze up to three months.

When you’re ready to enjoy the gravy again, let the gravy thaw overnight in the fridge.
Squeeze or scoop the gravy into a saucepan, and add a splash of milk.
Whisk constantly until heated and just simmering, adding milk as needed to reach the right thickness.

Make gravy:
Add butter to drippings in skillet, and cook until melted, 1 minute.
Whisk flour into hot fat until smooth; cook, whisking constantly, 1 minute.
