4tsp.pumpkin pie spice, divided

With mixer on low, gradually add dry ingredients until combined.

Cover bowl with plastic wrap and refrigerate until chilled, about 30 minutes.

Make sugar-spice mixture:

Meanwhile, preheat oven to 350F.

Line 3 large baking sheets with parchment paper; set aside.

Whisk together remaining 1 teaspoon pumpkin pie spice and 1/4 cup granulated sugar; set aside.

Repeat with remaining dough and spiced sugar mixture.

Let cool on pans for 5 minutes.
