Preheat oven to 400F.

Place potatoes on an aluminum foil-lined large rimmed baking sheet.

Meanwhile, heat oil in a large skillet over medium.

Add bell pepper, and cook, stirring often, 5 minutes.

Remove from heat, and sprinkle with salt and black pepper.
