Use as a topping on pulled pork, turkey, or ham sandwiches, or ondeviled eggs.

It can also add a unique twist topotato salador slaw.

Prepare Pickle Brine:

Stir together water, vinegar, sugar and salt in a medium saucepan.

Add shallot and crushed red pepper to brine mixture.

Bring to a boil over high, stirring until sugar dissolves.

Add Brine to jars:

Remove from heat; cool 10 minutes.

Pour over okra and mint sprigs.

Cover with a tight-fitting lid; chill 2 days.

Store:

Store, covered, in refrigerator up to 2 months.
