2boneless, skinless chicken breasts(about 1 1/2 to 2 lb.

Line a rimmed baking sheet with parchment paper and evenly coat with cooking spray before setting aside.

Use the pulse function to chop the pecans until theyre nearly the same size as the panko.

Pour the mixture into a shallow bowl.

Place flour in a separate shallow bowl.

Place beaten eggs in a third shallow bowl.

Coat chicken in pecan breading:

Take one of the chicken cutlets and coat it in flour.

Shake off the excess flour, dip it in the egg then coat it in the pecan mixture.

Use your hands to press the pecans onto any bare spots.

Place on the baking sheet and repeat with the remaining chicken.

Let rest for 10 minutes.
