Now you get to enjoy them in this richly comforting pasta side dish, a one-dish creamy tomato orzo.
Ingredients
2Tbsp.chopped oil-packed sun-dried tomatoes, plus 3 Tbsp.
Cook the shallots for 3 minutes or until translucent.

Add the garlic and thyme then cook for another 2 minutes before adding the tomato paste and sun-dried tomatoes.
Cook until the tomato paste turns from bright red to a darker red.
Stir in orzo:
Turn the heat down to medium-low and add the orzo.

Stir the orzo well, breaking up the tomato paste mixture and evenly coating the pasta.
Pour in the chicken stock and scrape up any tomato paste sticking to the bottom of the pan.
Continue to stir as the pan comes to a simmer.

Stir in the heavy cream, butter and Parmesan until completely incorporated.
Remove orzo from heat, and stir in the spinach, one cup at a time, until wilted.
Season with salt, pepper and smoked paprika.

Adjust seasonings to taste, if desired.
