Coat an 11 x 7inch baking dish with cooking spray.

Whisk together cider and cornstarch and set aside.
Stir in cider mixture; cook until thickened and glossy, 2 to 3 minutes.
Pour apple mixture into prepared baking dish.
Combine butter and remaining 14 teaspoon cinnamon in a medium bowl; add crushed crackers and toss to combine.
Sprinkle cheese over apple mixture; sprinkle cracker mixture over cheese.
Bake casserole, uncovered, at 350F until filling is bubbly and topping is browned, about 30 minutes.
