These mint julep brownies combine a beloved chocolate treat and a classic Derby cocktailthemint julep.
We brought those flavors into these dense, fudgy, bourbon-forward brownies for a truly decadent treat.

Does it get any better than that?
The choice of milk, bittersweet, or dark chocolate is up to you.
Soften at room temperature before serving, although they’re also delicious cold.

)unsalted butter
1cupgranulated sugar
3/4cup packeddark brown sugar
2(4-oz.
)all-purpose flour
1/2cupheavy cream
1(3/4 oz.
)bunch fresh mint
Directions
Prepare pan:
Preheat oven to 350F.

Coat an 8-inch square (2-inch deep) metal baking pan with cooking spray.
Line with parchment paper, leaving about 2 inches overhanging on 2 opposing sides of pan.
Coat parchment paper with cooking spray; set aside.

Melt butter; add sugars:
Melt butter in a medium saucepan over medium-low.
Once melted, whisk in granulated sugar and brown sugar until smooth, about 1 minute.
Whisk in cocoa powder, vanilla, 1/3 cup of the bourbon, and 1 teaspoon of the salt.

Let cool 5 minutes.
Repeat with remaining eggs.
Pour batter into pan:
Pour batter into prepared baking pan and spread into an even layer.

Remove from oven and cool completely in pan on a wire rack, about 1 1/2 hours.
Brush bourbon on brownies:
Poke shallow holes all over top of brownie.
Brush with remaining 1 tablespoon bourbon.

Remove from heat and let mint steep 10 minutes.
Remove mint from cream and discard; return cream just to a simmer over medium.
Make ganache:
Place remaining chopped chocolate (about 3 ounces) in a small bowl.

Pour 1/3 cup hot cream over chocolate and add remaining 1/4 teaspoon salt.
Let sit 30 seconds, then stir until smooth and glossy.
Add ganache to brownies:
Pour chocolate mixture over brownies and spread in an even layer.

Let sit until chocolate has set, about 1 hour 30 minutes.
Alternatively, refrigerate until set, about 45 minutes.
A velvety chocolate ganache topping is infused with fresh mint for a flavor that’s subtle and inviting.

If using extract, stir into the finished ganache to taste.
Bake only until a wooden pick inserted comes out with moist, fudgy bits.
