)can crushed pineapple, drained well

1cupsweetened shredded coconut(from 1 [14-oz.]
Remove and cool completely on a wire rack, about 30 minutes.
With the mixer still running, slowly add cream in a steady stream.

Continue beating on medium speed until mixture thickens and stiff peaks form, about 2 minutes.
Cover with plastic wrap, and refrigerate at least 4 hours or up to 8 hours.
