Preheat oven to 350F with racks in upper and lower third positions.

Line 3 large rimmed baking sheets using parchment paper; set aside.

Add vanilla; beat on medium speed until combined, about 15 seconds.

Cover bowl using plastic wrap; chill until dough is firm, about 30 minutes.

Using a 2-teaspoon cookie scoop, scoop dough onto prepared baking sheets, spacing 2 inches apart.

Place remaining 1/4 cup granulated sugar on a small plate.

Lightly coat bottom of a glass with cooking spray; dip glass into sugar to coat.

Let cookies cool on baking sheets 5 minutes; transfer to wire racks.

Repeat process with remaining baking sheet.
