Beat egg yolks in a medium bowl.

Whisk in lemon zest and juice.

Whisk in butter; cool completely, at least 1 hour, stirring occasionally.

Prepare oven and cake pans:

Preheat oven to 350F.

Butter and flour 3 (9-inch) round cake pans.

Gradually add sugar, beating until light and fluffy, about 3 minutes.

Beat at low speed until blended after each addition.

Fold 13 of egg whites into batter.

Bake in preheated oven until a wooden pick inserted in center comes out clean, 22 to 28 minutes.

Gradually add powdered sugar, beating at low speed until blended, about 3 minutes; stir in vanilla.

Assemble the cake:

Place 1 cake layer on desired serving platter or cake stand.

Pipe a 1/2-inch ring of frosting around outer edge of cake layer.

Spoon 1 cup Lemon Filling inside frosting ring, and spread evenly.
