What Are Lace Cookies?

Lace cookies are sugary, chewy cookies that are extra thin and crispy on the edges.

The cookies will become too humid and damp during thawing.

Ingredients

1/2cup(4 oz.

Line 4 baking sheets with parchment paper or silicone baking mats.

Melt butter:

In a medium saucepan, melt butter over medium, about 2 minutes.

Add sugar and corn syrup to butter:

Add sugar and corn syrup to pan.

Cook, stirring constantly using a rubber spatula, until sugar dissolves and is bubbling, about 1 minute.

Finish batter:

Whisk almond flour and salt into mixture in pan until soft dough forms.

Stir in vanilla extract.

Set aside, and let cool for 10 minutes.

(After cooling, dough will thicken.)

Place 10 balls on each baking sheet, spacing 3 inches apart.

(Cookies will be bubbling when removed from oven.)

Assemble cookies:

Spread 1 teaspoon hazelnut spread on half of cookies.

Top each with remaining cookie halves.

Transfer to a platter.
