What Is Yeast?

It is a leavener that helps dough to rise as it bakes.
Yeast comes in several forms, including active, fresh, and instant.
Do not use the yeast if it’s past its expiration.
Water should be between 100 and 110F.
If you don’t have a thermometer, use your wrist to test the water temperature.
If it feels very warm on your wrist, it’s ready.
The sugar helps activate and feed the yeast.
