The giblets infuse a lot of that classic turkey flavor, and they’re also rich in nutrients.
What Are Drippings?
Drippings are the leftover bits of fat that have melted away and fallen off the turkey as it cooks.

Making a roux with turkey drippings imparts that classic turkey flavor.
Otherwise we’d probably use a cornstarch slurry.
Add turkey neck and giblets, onion, carrots, celery, and garlic.

Cook, stirring occasionally, until turkey pieces are browned, about 8 minutes.
Add wine, scraping to release any browned bits.
Cook, stirring often, about 1 minute.

Make fortified stock:
Add stock, parsley, thyme, and bay leaves.
(Add more stock as needed to yield 3 cups.)
Separate drippings and fat:
Strain drippings; discard solids.

Let stand 5 minutes; spoon fat from liquid.
Set aside fat and drippings separately.
Add flour, and cook, stirring constantly, until toasted, 2 to 3 minutes.

Whisk in reserved drippings.
Season with salt and pepper to taste.
