In the refinement process of sugarcane, you get sugar crystals and molasses, a bitter but flavorful by-product.

Brown sugar is simply refined white sugar combined with some of thatmolasses.
Once the marshmallows in your brown sugar dry out, replace them with fresh ones.
(They will typically last a few weeks.)
What About Other Brown Sugar Softening Techniques?
