Types Of Yeast
Two types of yeast come in packets: active dry and instant.
Though it’s less common, fresh yeast is also used in some bread recipes.

Fresh yeast is typically sold as a small cake and has a soft, crumbly texture.
How Much Yeast Is in A Packet?
Dry yeast, active dry and instant, is sold in packets, usually in a set of three.

Each standard envelope contains about 2 1/4 teaspoons of yeast.
By weight, that’s 7 grams or 1/4 ounce.
Dry yeast is also often sold in 4-ounce jars, which equals 16 packets.
To measure yeast from a packet, use level teaspoons.
Use a scale to measure the yeast by weight for even more precision.
In this instance, jewelry scales are great for measuring small amounts of yeast and other ingredients.
It’s also important to keep yeast dry, as exposure to moisture contributes to a decline in quality.
Set the leavening agent on the counter 30 minutes before making your recipe.
Store open yeast packets in the fridge or freezer, anduse within four weeks of opening.

How Long Do Yeast Packets Last?
Yeast packets last about two years, if unopened.
(It’s worth noting that instant yeast doesn’t require proofing.)
