The best plan of action is to measure the amount of potatoes you’ll need by weight.

This should ensure everyone gets plenty of mashed potatoes, with minimal leftovers.
Luckily this makes the math super easy.
One large russet potato weighs about a pound.

Smaller potatoes weigh less, so you’ll need about three to make a pound.
Waxy varieties, like red potatoes, hold their shape really well.
That’s why we always recommend opting for starchier kinds of potatoes.

The standard option is a russet, but Yukon Gold is another great choice.
Refrigerate any leftovers in an airtight container for up to three days.
Use 1/2 cup of liquid for every four cups of mashed potatoes.
