Refrigerate for up to four days or freeze for up to three months.

Thaw overnight in the refrigerator if frozen.

Lightly spray a shallow 1 1/2-quart baking dish with cooking spray.

Transfer mixture to prepared baking dish, and spread in an even layer.

Top with remaining 1/4 cup bacon.

Bake:

Bake in preheated oven until bubbling around edges, 12 to 15 minutes.
