Nothing is easier (or better) than a skillet dinner.
Poblano peppers add fresh flavor, but your favorite color of bell pepper would work just as well.
For a little more spice, add additional hot sauce or switch to pepper Jack cheese.

)can beef broth

)can petite diced tomatoes, undrained
1(1 oz.
In a large skillet, heat oil over medium.
Add ground beef and cook until browned and crumbly, about 5-6 minutes.

Add poblano pepper, onion, and garlic.
Cook, stirring often, until vegetables have softened, about 5 minutes.
Stir in rice and bring to a boil over medium-high.

Stir well, scraping up any rice on the bottom of the pan.
Sprinkle with cheese, cover, and cook 5 minutes longer until cheese has melted and rice is tender.
Serve topped with chopped cilantro, tomato, avocado, scallions, and sliced pickled jalapeno peppers.
