Any sandwich bread will work here; we tested with honey wheat.

Ingredients

3Tbsp.mayonnaise

1/2(5.3-oz.)pkg.

garlic and herbs soft spreadable cheese(such as Boursin)

1(4-oz.

Combine mayonnaise and spreadable cheese in a medium bowl, stirring until smooth.

Stir in pimientos and cheddar cheese.

Heat a large skillet over medium-low.

Spread about 2 teaspoons butter over 1 side of each bread slice.

Divide pimiento cheese evenly among 4 bread slices, buttered side down.

Top with remaining 4 bread slices, buttered side up.

Place sandwiches in skillet.

Cook until bread is toasted and cheese is melty, 4 to 5 minutes per side.
