Add Honey-Glazed Ham drippings (or chicken stock) and mustard; bring to a simmer over medium-high.

Continue simmering, stirring occasionally, until reduced by half, 5 to 6 minutes.
Swirl in the remaining 2 tablespoons butter until melted, about 1 minute.
