Remove pork from Dutch oven; shred with a fork.

Remove and discard fat from surface of sauce.

Return shredded pork to Dutch oven, and toss gently to evenly coat with sauce.

Reserve 2 cups pork and 1/4 cup sauce for Spicy Pork Lettuce Wraps (recipe follows).
