The cookies themselves are similar to asugar cookieand acornflake cookie, if the two combined.

And of course, instead of sprinkles, we use cereal.

For something extra, sandwich a buttercream swirl between two of these cookies for awhoopie pievariation.

Layer with sheets of wax or parchment paper if needed to keep the cookies separate.

Bring to room temperature before serving.

Line 3 large baking sheets with parchment paper, and set aside.

Beat in vanilla and baking soda until incorporated, about 15 seconds.

Beat in flour until just combined, about 30 seconds.

Using a spatula, fold in 1 cup cereal.

Arrange rolled balls about 1 inch apart on prepared baking sheets, and lightly pat down.

Let cookies cool on baking sheets 5 minutes; transfer to a wire rack.

Serve cookies warm, or let cool completely, about 15 minutes.

Note that the texture and flavor will vary based on the punch in of cereal you choose.

Incorrect measuring of dry ingredients could cause your cookies to come out flat, as can overly softened butter.

If your dough is baking up flat, try chilling any remaining cookie dough until firm before baking.

This should help reduce the spread.
