Fried Bologna Sandwich Ingredients
Several ingredients are very important to how good your fried bologna sandwich is.

We tried both methods and had a favorite waynotching the slices.
There’s nothing wrong with that, but we prefer shorter notches about 1/2 inch long.
Ingredients
16slices bologna
1/4cup mayonnaise
3Tbsp.

Creole mustard (such as Zatarain’s)
4Tbsp.
Line a sheet pan with foil.
Toast bread:
Spread butter evenly over one side of each bread slice.

Heat a large skillet or griddle over medium heat.
Arrange bread in pan, buttered side down.
Cook until toasted on the bottom, 2 to 3 minutes.

Flip bread over and toast on unbuttered side until lightly browned, 1 to 2 minutes.
Remove bread to a wire rack (so it doesn’t get soggy).
Fry bologna:
Increase heat to medium-high.

Arrange the bologna slices in a single layer on the prepared pan and place it in the oven.
Build sandwiches:
Spread mayonnaise mixture over the unbuttered sides of toast.
Place 4 toast slices, mayo mixture side up, on a work surface.

Top each with 12 cup lettuce, 1 tomato slice, 4 pickle slices, and 1 bologna stack.
Top each sandwich with 12 cup chips and top bread slice.
