These super-creamy truffles truly capture the essence ofeggnog.
Ingredients
2(12-oz.

Top with eggnog, butter, and nutmeg.
Microwave on High until almost smooth, about 1 1/2 minutes, stirring every 30 seconds.
Remove from microwave and stir until chocolate is completely melted and mixture is smooth.

Stir in rum extract.
Cover and refrigerate mixture until firm, about 2 1/2 hours.
Scoop truffles:
Scoop chocolate mixture into 22 balls, about 1 tablespoon each.

Roll balls quickly between hands until evenly rounded (mixture will be slightly soft).
Arrange balls on a plate or small sheet pan lined with wax or parchment paper.
Freeze for 20 minutes.

Melt chocolate:
Pour remaining bag of chocolate chips into a medium microwave-safe bowl.
Add coconut oil to boil.
Microwave on High until almost smooth, about 1 1/2 minutes, stirring every 30 seconds.

Remove from microwave and stir until chocolate is completely melted.
Dip each truffle in melted chocolate:
Remove chocolate balls from freezer.
Working with 1 chocolate ball at a time, dip into melted chocolate, turning to coat.

Lift out of chocolate, allowing excess to drip off.
Arrange back on lined plate or sheet pan.
Repeat process until all chocolate balls are coated.

If desired, scrape remaining melted chocolate into a small zip-top plastic bag.
Snip a tiny hole in one corner of bag; pipe chocolate in a decorative drizzle over truffles.
Freeze until chocolate is set, about 5 minutes.

Store truffles in an airtight container in refrigerator for up to 2 weeks.
