If you have leftovers, hang on to some of the cooking liquid.
Ingredients
2large (10 oz.)

sweet onions, cut into 1/2-inch slices (about 6 cups)
1(5- to 6-lb.)
Rub roast with seasoning blend and salt; place roast on onions.
Pour broth over roast.

Remove onions using a slotted spoon, and serve with pork.
(Pork and cooking liquid may be refrigerated separately in an airtight container for up to 3 days.)
