Place a wire rack inside a rimmed baking sheet; set aside.
Stir eggs, flour, baking powder, and salt into potato mixture until combined.

Heat over medium-high until shimmering, about 5 minutes.
Scoop batter in 1-tablespoon portions; carefully add to oil (do not overcrowd pan).
Using the back of a spoon, gently flatten each portion to about 1/4 inch thick.

Keep latkes warm before serving:
Use a slotted spatula to transfer latkes to prepared baking sheet.
Sprinkle with salt to taste; keep warm in preheated oven.
Repeat with remaining batter, adding more oil to skillet as needed.

Smoky Tomato Butter
Makes about 3/4 cupActive 20 min.
Reduce heat to medium; stir in1 tablespoon olive oil,1 tablespoon thinly sliced garlic, and1/2 teaspoon smoked paprika.

Using back of spoon, press tomatoes to break down; stir well until combined.
Stir in2 tablespoons white balsamic vinegar; cook, stirring often, until slightly thickened, about 5 minutes.
Remove from heat; stir in2 tablespoons salted butteruntil melted and combined.
