Ingredients

6Tbsp.

)unsalted butter

1/2cupchopped shallots(from 2 large [3 oz.

total] shallots)

4(5-in.

Heat butter in a large 5- to 6-quart pot or Dutch oven over medium until melted.

Add shallot and cook, stirring often, until just slightly softened, about 2 minutes.

Bring to a rolling boil over medium-high, then reduce to a simmer over medium-low.

Cover and simmer, undisturbed, until carrots are just tender, about 8 minutes.

Transfer carrot mixture to a platter using a slotted spoon; discard thyme sprigs.

Return carrot mixture to platter.

Sprinkle with pecans; garnish with thyme.
