Whisk together broth, grits, salt, and pepper in a 13- x 9-inch baking dish.
Meanwhile, heat a large skillet over medium-high.

Add sausage and cook, stirring often to crumble, until browned, about 8 minutes.
Transfer to a large paper towel-lined plate with a slotted spoon.
Top with remaining 1 cup Cheddar and 1/2 cup each reserved sausage and bacon.

Bake in preheated oven until grits are set and cheese is bubbling, about 20 minutes.
Let stand 15 minutes before serving.
Garnish with scallions, and serve with hot sauce.
