First, slice and juice the oranges up to a day in advance.

Then, make the salad dressing and refrigerate it for up to three days before assembling the salad.

Cut away peel and pith of citrus and slice flesh into 1/4-inch-thick rounds, then cut rounds in half.

Gradually add oil, whisking constantly, until combined.

Toss spinach with dressing:

Add spinach and remaining 1/4 teaspoon salt and toss to combine.
