Place chicken between 2 pieces of parchment paper; use a rolling pin to flatten to about 1/4-inch thickness.

Make chicken bundles:

Place chicken breasts, smooth sides down, on a plate.

Sprinkle evenly with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper.

Stir remaining 1 teaspoon salt and 1/4 teaspoon pepper into panko.
