Add mushrooms (if using), and yellow onion; cook 5 minutes or until beginning to soften.

Stir in rice and ham until evenly combined.

Stir in chicken broth, milk, cheese soup, sour cream, and 1 cup cheese.

While rice mixture bakes, prepare breadcrumb topping and broccoli.

Set aside until ready to use.

Drain and pat broccoli dry.

After rice is tender, increase oven temperature to broil.
