Thaw the dish in the fridge overnight.
If the heat has died out while frozen, add a sprinkle more of the seasoning.
Pound with a meat mallet or small skillet to an even 1/2-inch thickness.

Sprinkle both sides of chicken evenly with 1 1/2 teaspoons Cajun seasoning.
Cook chicken:
Heat a large cast-iron skillet over medium-high.
Add 2 tablespoons oil to pan and swirl to coat.
