What Is Browned Butter?

Butter, unlike oil or shortening, adds flavor as well as fat to sweet and savory recipes.

To make it, heat butter over low until melted.

Swirl occasionally while cooking.

Use as you would regular butterwhether melted, at room temperature, or chilled.

Once you smell the browned butter cooking, it will all be worth it.

Thaw and rewhip, if needed, before using.

Ingredients

2cupssaltedbutter

6cupspowdered sugar

1/4cup(2 oz.)

Remove pan from heat; immediately pour butter into a small heatproof bowl.

Let stand 15 minutes.

Cover; chill until butter is cool and almost firm, about 1 hour, stirring every 15 minutes.

Stir together bourbon, cream, and vanilla in a bowl.

Add to butter mixture; beat until smooth, 2 minutes.
