You absolutely do not have to blend the soup.

Add the blended soup back to the Dutch oven, and finish the soup.

Broccoli-Cheddar soup is a light and easy dinner.

You don’t necessarily need to add anything else to the table to make it a full meal.

Freeze extras for future busy days.

Pour leftovers into a freezer-safe container or zip-top bag, and freeze up to 3 months.

Thaw in the fridge overnight, or thaw in the microwave.

Reheat on the stove or in the microwave.

Top with cheese, and serve.

Add onion, and cook, stirring often, until softened and translucent, about 4 minutes.

Add garlic, and cook, stirring constantly, until fragrant, about 1 minute.

Add potato and carrot; cook, stirring often, 1 minute.

Reduce heat to medium, cover, and simmer until potato and carrot are tender, about 10 minutes.

Blend soup:

Working in batches, if needed, pour soup into a blender.

Secure lid on blender, and remove center piece to allow steam to escape.

Place a clean towel over opening.

Process until smooth, about 30 to 45 seconds, and return to Dutch oven.

Serve soup topped with sprinkled cheese.
